Cooking certainly does not have to be complex and time-consuming, especially after a long day! Thus, this Easy Peasy Pizza is perfect when you need a simple meal idea. Specifically, this is ideal for those low on time and still want to avoid eating out.

With this, you have the flexibility to use whatever grain you have on hand. For example, for the pizza crust, try whole-grain pitas, English muffins, or tortillas. As for the toppings, I encourage you to use whatever veggies and cheese you desire for delicious variety on your personal pizza. From traditional toppings, like mushrooms, tomatoes, and green peppers, to more unconventional pizza toppers, like zucchini, eggplant (which I also love to use as a pizza base), or even sweet potato, feel free to have fun and add whatever you want! This also makes family or date night dinner just a little more fun.

  • Serves: 2
  • Cook time: 8-10 minutes
  • Prep time: 10 minutes

Ingredients:

  • 2 whole-grain tortillas
  • 4 tbsp pizza sauce
  • Sprinkle oregano, dried
  • 5 mushrooms, sliced
  • ¼ green pepper
  • ½ tomato, sliced
  • ½ cup mozzarella and cheddar cheese, grated
  • Fresh parsley

Directions for this Easy Peasy Pizza:

  1. Firstly, pre-heat the oven to 350 degrees Farenheight
  2. Secondly, cut and clean veggies of choice and grate cheese.
  3. After that, spread pizza sauce on top of tortillas. Sprinkle dried oregano.
  4. Then, top pizza with cheese and veggies.
  5. Finally, Bake for 8-10 minutes until cheese is melted and crust is golden.

It’s really that easy! In under half an hour, your Easy Peasy Pizza will be ready to enjoy. Again, I love this recipe for how versatile and customized it is to your preferences so I would love to hear what toppings you opted for. Did you add anything extra?
