Are you getting enough veggies? Making them irresistibly delicious is certainly the perfect way to get enthused about increasing your intake. These Zucchini Fries make for a perfect appetizer or as a side dish in addition to lunch or dinner. They might even be a great way to get your picky eaters to try zucchini.

Do you have a picky eater? Are mealtimes a struggle?  Do you feel like a short-order cook at the mercy of making WHATEVER your little one will eat?  Are you tired of eating “kid-foods” and wish your child was not so darn picky!?  If you said yes to any of these questions, you are not alone.  In fact, up to 35% of parents describe their children as picky (Dietitians of Canada, 2017). This statistic is not to alarm us but to inspire us to support our kids to improve their eating confidence so they can develop a healthy (and positive) relationship with food as they grow.   • Cook time: 20-25 minutes
  • Serves: 2

Ingredients:

  • 1 large zucchini, cut into strips
  • 1 large egg + 1 Tbsp water
  • 4 Tbsp parmesan cheese
  • ½ cup breadcrumbs
  • pinch of salt, pepper, oregano

Directions for Zucchini Fries:

  1. Firstly, pre-heat oven to 400F.
  2. Secondly, line baking sheet with parchment paper.
  3. Beat an egg in a bowl and add 1 Tbsp water; this will be used for dipping zucchini. Add little salt and pepper in addition to egg mixture if desired.
  4. Add pinch of salt and oregano, fresh ground pepper and parmesan cheese into the breadcrumbs. Place breadcrumbs on a flat plate.
  5. Dip zucchini strips first in the egg and then into the breadcrumbs.
  6. Lay coated zucchini onto the lined baking sheet.
  7. Finally, bake in the oven for 12-15 minutes and flip over to prevent burning. Continue baking for another 8-10 minutes until crispy.
