Berry Kale Salad with Honey Goat Cheese

Do you find yourself reluctant to try kale as a salad? Maybe out of fear that it will taste too bitter? Kale greens are certainly a perfect complement to sweet flavours like fruits and savory flavours like goat cheese. That’s why this Berry Kale Salad recipe is perfect and delicious! I hope you enjoy some fresh foods this summer, outdoors with the BBQ sizzling and surrounded by family and friends. They are low in calories and high in vitamins and minerals like vitamin A, vitamin K, potassium, folate, etc. Furthermore, adding a salad to your meal(s) is a quick and easy way to increaseyour veggie intake since we know we arenot getting enough!


  • Serves: 4
  • Prep time: 10 minutes

Ingredients:

  • 4 cups fresh kale, stems removed & chopped
  • 1 cup fresh strawberries,sliced
  • 1/3 cup honey goat cheese, crumbled
  • ¼ cup sunflower, roasted and unsalted
  • 1/4 cup raisins
  • 2 Tbsp of olive oil to coat salad
  • 1 Tbsp balsamic vinegar

Directions for Berry Kale Salad:

  1. Firstly, clean lettuce leaves thoroughly in cold water.
  2. Secondly, combine ingredients in a salad bowl.
  3. Add oil and vinegar dressing to the salad. However, if you want to make this as meal prep, bring the dressing in a separate container.
  4. Finally, toss salad and enjoy!

The sweet and savoury flavours compliment each other perfectly in this Berry Kale Salad!

Ingredients

  • 4 cups fresh kale, stems removed & chopped
  • 1 cup fresh strawberries, sliced
  • 1/3 cup honey goat cheese, crumbled
  • ¼ cup sunflower, roasted and unsalted
  • 1/4 cup raisins
  • 2 Tbsp of olive oil to coat salad
  • 1 Tbsp balsamic vinegar

Instructions

    1. Clean lettuce leaves thoroughly in cold water.
    2. Combine ingredients in a salad bowl.
    3. Add oil and vinegar dressing to salad.
    4. Toss salad and enjoy!
