Winter Breeze Salad

In the frigid winter months we can depend on having fresh fruits imported at reasonable prices and still packed with flavour.  Here is a simple recipe that uses readily available winter fruits and greens! Serves: 4 Prep time: 15 minutes   Ingredients: 4 cups of fresh greens (I used half spinach and half romaine lettuce) 1 orange (peeled and sliced into chunks) 1 cup blackberries 2 Tbsp craisins or dried cranberries 2 Tbsp slivered almonds, unsalted   2 Tbsp olive oil to coat salad 1 Tbsp balsamic vinegar salt to taste   INSTRUCTIONS: 1.    Clean lettuce leaves thoroughly in cold water 2.    Combine ingredients into a salad bowl 3.    Add oil and vinegar dressing to salad mix 4.    Toss salad and enjoy!...

Pomegranate Goat Cheese Salad

In my latest blog post I selected pomegranates for my winter superfood!  Here is an easy and tasty recipe to use this sweet fruit! Hearty Homemade Greek Salad

Here is a simple Greek salad recipe with a homemade dressing. I added chickpeas on top for added carbohydrate, protein, fibre and healthy fats. Adding a carbohydrate (or two) to your salad could make it into an entrée to fuel you during your busy day. Sometimes simplicity is the best thing!  This is a 7 ingredient salad that is sure to be a crowd pleaser! Remember when making your own vinaigrette, use 2 parts olive oil to 1 part balsamic vinegar.  Choose dark green veggies for a magnesium boost (Click here for health benefits). Homemade Balsamic Dressing!

This is probably the best homemade balsamic dressing I have ever tasted.  I had this at a dinner party and insisted on getting the recipe to share on my blog (thank you Maria).  I had this dressing served on a strawberry, goat cheese and walnut salad with spinanch leaves.  YUM! * The dressing is also gluten free for those on a specialty diet. Serves: 8 Prep time: 5 minutes Ingredients: 1/4 cup balsamic vinegar 3/4 cup extra virgin olive oil 1 tsp of brown sugar Pinch salt Fresh ground black pepper, to taste ½ clove of fresh garlic, chopped Instructions: 1. Easiest Greek Lentil Salad

As part of February's "heart health month," I would like to share quite possibly the EASIEST Greek Lentil Salad. Makes a great fibre and protein-paced lunch along with a glass of low-fat milk (or yogurt) and a fruit.  Presto! Easy, right?
