Orange & Blueberry Kale Salad

I am a huge fan of making salads the star of a meal! After all, who wants to eat a boring salad? I have two tips to make salads fun and certainly stress-free. Firstly, Prepare your salad greens in advance (cut, clean, dry and place in airtight containers). Secondly, combine delicious ingredients! I absolutely love this Orange & Blueberry Kale Salad because it combines sweetness and crunch with a simple homemade dressing. I topped this salad with a product called Qi’a, which is a mix of chia seeds, hemp and buckwheat.

  • Prep time: 10 minutes

Ingredients:

  • 4 cups kale, stems removed & chopped
  • 1 orange, segmented
  • ½ cup blueberries
  • 3 Tbsp chia seeds or qi’a
  • 3 Tbsp raisins
  • 2 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • pinch of salt if needed

Tip: Additionally, I squeeze any extra juice from the inside of the orange peels on top of the salad!

Instructions for Orange & Blueberry Kale Salad:

  1. Firstly, cut off stems and the tough middle pieces on kale. Chop into bite-size pieces. Clean kale leaves and dry in a salad spinner.
  2. Secondly, in a large salad bowl, place kale leaves, orange segments, blueberries, raisins and chia.
  3. Drizzle oil and balsamic vinegar over salad and toppings. Finally, toss salad to combine ingredients. You want the kale leaves to be coated lightly.
