Spinach Salad with Walnuts & Feta

So you are planning to include more veggies in your diet, why not include more spinach since it is one of those versatile greens that you can eat raw or cooked? That’s why I created todays Spinach Salad with Walnuts & Feta recipe. Spinach is awesome added to stir fries, omelettes, smoothies or tossed in a fresh salad. Additionally, Dietitians of Canada has some other ideas on how to use your dark leafy greens!

  • Chop kale, spinach, or Swiss chard finely and add to tomato or meat sauce.
  • Use spinach or arugula to make a pesto and use on pasta, chicken or pizza.
  • Add chopped greens to a stir-fry near the end of the cooking time. Cook until they are wilted but still bright green.
  • Add fresh or frozen chopped greens to vegetable soups, stews or chilli.
  • Skip the iceberg lettuce in your salads and sandwiches and try arugula, baby spinach, mesclun mix, watercress or baby mustard greens.

They are low in calories and high in vitamins and minerals like vitamin A, vitamin K, potassium, folate, etc.  Furthermore, adding a salad to your meal(s) is a quick and easy way to increase your veggie intake since we know we are not getting enough!   • Serves: 4

Ingredients:

  • 4 cups spinach,washed
  • ½ cup walnuts, roasted
  • 1 cup blackberries
  • 1/3 cup fetacheese, crumbled
  • 3 Tbsp craisins
  • 2 Tbsp olive oil
  • 1 Tbsp balsamic vinegar

Instructions for Spinach Salad with Walnuts & Feta:

  1. Firstly, clean spinach and place into large bowl.
  2. Secondly, add berries, feta, craisins and seeds on top of salad greens.
  3. Drizzle greens and toppings with olive oil and balsamic vinegar.
  4. Finally, toss to combine.
  5. Oil or vinegar may needed in addition, as desired, your goal is just to lightly coat your ingredients.

Ingredients
