Red Lentil Soup with Lemon Ginger
This Red Lentil Soup with Lemon Ginger is one of my all time favourite soup recipes! It is so hearty that it can be consumed as a meal or in a smaller portion as a starter.I certainly love my fair share of lentil soups and have lots of variations using the powerhouse protein. If you are not familiar with lentils, they are little edible seeds grown in a pod and part of the legume family.
Lentils
Lentils vary in size, shapeandcolourand generally have a mild, nutty flavour. Moreover, they areproteinand fibre powerhouses. In 1/2 cup of cooked lentils there are 9g of protein and 8 grams of fibre! The type of fibre in lentils is mostly the cholesterol lowering kind, namely soluble fibre. Therefore, lentil consumption is beneficial in the prevention of heart disease! Lentils contain magnesium and remember that magnesium is heart healthy because it helps veins and arteries to relax which improves blood flow. - Cook time: 40 minutes
Ingredients:
- 1 ½ L of chicken or vegetable broth (ready made or homemade)
- 1 cup red lentils (dried)
- Single medium onion, chopped
- 1 cup green beans, chopped
- Single red pepper, chopped
- 1 cup mushrooms,sliced
- 2 cloves of garlic, minced
- 1 Tbsp lemon juice
- 1 tsp fresh ginger, minced
- 2 Tbsp olive oil
Directions for this Red Lentil Soup:
1. Firstly, sweat onion and garlic in olive oil until transparent.
2. Secondly, add green beans, red pepperand cook for a couple minutes until softened. Add mushrooms, and then heat for about 2 minutes until softened.
3. Afterwards, add lemon juice to vegetables.
4. Then, add in vegetable stock, lentils, and ginger topot.
5. Finally, simmer until the lentils are cooked fully (about 30-40 minutes)
Tip: Be sure to taste it before serving in case it needs some more lemon juice or ginger to taste.
