This Ricotta Toast with Blistered Tomato is the perfect way to use up your garden harvest. After all, Ontario tomato season is wrapping up in September. Nevertheless, my Blistered Tomato Ricotta Toast recipe is a 15-minute meal that’s sure to inspire your next breakfast, lunch or dinner. Finally, be sure to add that olive oil drizzle and balsamic glaze for a beautiful finishing touch. After all, they do say we eat with our eyes.

Let’s use these beautiful Midnight Snack Tomatoes for my Ricotta Toast!

What are Midnight Snack Tomatoes?

Before this summer, I’d never heard of Midnight Snack Tomatoes. They’re a unique type of cherry tomato with a gorgeous black-purple colour along with a classic red shade interwoven when ripened. Interestingly, when Midnight Snack Tomatoes are exposed to sunlight, anthocyanin pigments (a.k.a plant-based antioxidants) cause a colour change to black/purple/blue. This is the same antioxidant that makes blueberries turn blue or cherries dark red.

How to Know When Midnight Snack Tomatoes are Ripe?

You will notice that only the side of the tomato exposed to sunlight will turn black/purple. Therefore, when the tomato is unripe, the unexposed side will be green. Where as, when ripe, the Midnight Snack tomato is red on the underside. This nutritious and tasty tomato typically matures earlier than other cherry tomatoes. It’s unique beauty makes it a special addition to salads, stir-frys, and, of course, this Blistered Tomato Ricotta Toast recipe.

What is Ricotta?

A type of fresh, Italian cheese (translates to ‘re-cooked’) traditionally made from leftover whey, which is the liquid remaining after milk has been curdled and strained. Ricotta is a by-product of the manufacture of cheese. Generally, it is low in milk fat and has small cheese curds that are left behind in the whey. In half a cup of partly skimmed Ricotta, you’ll receive 14 grams of protein along with a third of your daily calcium.

Blistered Tomato Ricotta Toast Recipe


  • Serves: 1
  • Prep Time: 10 minutes
  • Cook Time: 5 minutes

Ingredients:

Garnish: Balsamic Glaze and olive oil drizzle

Directions Blistered Tomato Ricotta Toast:

  1. Firstly, heat a medium fry pan with oil. Add sliced cherry tomatoes to the warmed oil and move around to soften and darken.
  2. Next, sprinkle Kosher Salt and pepper on tomatoes. Set aside once cooked.
  3. Then, spread ricotta cheese over toast.
  4. Spoon blistered cherry tomatoes on top of ricotta toast.
  5. Finally, finish with a drizzle of olive oil and balsamic glaze.

This Blistered Tomato Ricotta Toast is sensational! Simple 15-minute meal any time of day.

Ingredients

  • 1 cup of cherry tomatoes, sliced
  • 1 tsp Extra virgin olive oil, extra for drizzle later
  • 2-3 slices of your favourite bread, toasted (Sprouted grain bread, Gluten Free, etc.)
  • ½ cup Ricotta cheese
  • Fresh herbs (Italian Parsley, chives, scallions)
  • Garnish: Balsamic Glaze and olive oil drizzle

Instructions

    1. Firstly, heat a medium fry pan with oil. Add sliced cherry tomatoes to the warmed oil and move around to soften and darken.
