Have you had Jerk Chicken Drumsticks before? They’re exceptionally flavourful and full of warm spices. Truly, they make a perfect oven meal for this winter ahead. Additionally, feel free to use this delicious Jerk Spice seasoning on the chicken thighs or wings too. If you feel even more inspired, you can add a mango salsa on top for a citrusy kick.

Jerk Chicken Drumsticks

During the COVID pandemic, people are spending more time cooking and trying new recipes. Try grabbing a new spice and working it into your weekly dinner menu. That’s how this recipe came about! I was having a virtual cooking night with a friend and she chose a recipe that required jerk spice. However, I was reluctant to buy a new ingredient not knowing how I would use the bottle. Nevertheless, I bought the bottle from the spice aisle at my local Sobeys and then decided to come up with my own jerk chicken drumstick recipe. I’ve since purchased several new bottles of jerk spice, which has now become a favourite pantry staple!

Jerk Chicken Drumsticks Recipe


  • Prep Time: 10 minutes
  • Cook Time: 40 minutes
  • Serves: 6

Ingredients:

  • 8-10 chicken drumsticks
  • 2 tbsp Jerk spice blend
  • 2 tsp oregano
  • 1 tsp red pepper flakes
  • 2 tsp chili powder
  • 1 tbsp canola oil
  • Pinch of Kosher salt and fresh ground pepper

Mango Salsa:

  • 1 mango, cut into chunks
  • 2 tbsp red peppers, cut into small pieces
  • ½ tbsp Canola oil
  • ½ tbsp red pepper flakes
  • 1 tsp shallot in red wine vinegar (have sit for 15 minutes) and then scoop out shallot and some of the vinegar.
  • 2 tbsp Green onions, chopped
  • Pinch Kosher Salt and fresh ground pepper

Directions Jerk Chicken Drumsticks:

  1. Preheat oven to 450F.
  2. Place raw chicken drumsticks/thighs in a large bowl or plastic bag. Sprinkle with Kosher salt to draw out the juiciness of the chicken.
  3. In a small bowl, combine all dry spices. Stir to combine.
  4. Add spices to the salted chicken and add oil as well. Stir to combine so chicken is well coated.
  5. Let chicken marinate for 2 hours or a day in advance.
  6. Then, place marinated Jerk Chicken drumsticks on a parchment-lined baking sheet.
  7. Bake for 40-45 minutes, turning halfway through cooking. Ensure no pink remains or a thermometer reads 165 degrees.
  8. Finally, serve warm and enjoy!
