Rainbow Salad Fresh from the Garden
Summer is the perfecttime to head to the farmer’s market and pick up fresh fruits andveggies! I’m excited to share my a simple summersalad, since it’s certainly one of the best ways to use your fresh produce. This Rainbow Salad features colourful veggies like tomato, orange peppers, and cucumber to make your plate look as good as it tastes. These ingredients also pack a punch in terms of their nutritional benefits. Tomatoes, for example, are rich in vitamin C. Some functions of vitamin C include:
- Assists in growth, maintenance and repair of tendons, ligaments, blood vessels, cartilage, bone and teeth
- Enhances iron absorption (Tip: consume citrus at the same time as iron rich foods)
- Antioxidant quality helps prevent damage from free radicals that cause aging and diseases like cancer
So, with that, I hope you enjoy this fresh vegetable salad as an alternative to the more traditional green salads.

- Prep time: 10-15 minutes
Ingredients:
- 1 cucumber, peeled and sliced into quarters
- 1 large fresh tomato, diced
- ½ or whole orange or coloured pepper, sliced
- ¼ cup feta cheese, crumbled
- 4 Tbsp Olive Oil
- 2 Tbsp red wine vinegar
- Garnish: Italian Parsley
- Salt and pepper to taste
Directions for this Rainbow Salad:
- Firstly, wash and chop produce and place into large bowl.
- Then, add olive oil and vinegar and toss to combine all ingredients.
- Finally, top with feta cheese and fresh parsley.
