Who does not love a DIY (Do It Yourself) meal? Taco meals certainly offer the flexibility to include the foods or ingredients you like. These types of ‘separate ingredient’ meals also allow kids to help in the kitchen, which builds food confidence as a life-long skill to eating well. This recipe for Tasty Beef or Bean Tacos also allows for amazing leftovers for those busy nights when you don’t have time to cook. Taco Tuesdays are also a fun trend where you can swap out the fillings to make fish tacos, pulled pork, shrimp tacos, chipotle beef, buffalo chicken, tofu tacos, beef and citrus tacos, etc.

Tasty Beef or Bean Tacos Recipe


  • Serves: 3-4
  • Prep time: 15-20 minutes
  • Cook time: 15 minutes

Ingredients:

  • Corn Tortillas, soft shell
  • Olive or canola oil
  • ¼ cup onion, finely chopped
  • 500 g Lean ground beef and/or Black Beans (540mL), canned and rinsed
  • 1 cup of mushrooms, finely chopped
  • Taco spice (or make your own taco seasoning)
  • 2 avocados, smashed
  • 1 lime, juiced into avocados
  • 1 cup tomatoes, chopped
  • 1 bell pepper, sliced into strips
  • 1 cup cheese, grated
  • 1 cup plain yogurt
  • 2 cups lettuce, arugula
  • Salt and pepper to taste

Additional Topping: Parsley or Cilantro for garnish and hot sauce

Directions for Tasty Beef or Bean Tacos:

  1. Firstly, in a medium-hot fry pan, add small amount of oil. Add onion to the fry pan and sauté until slightly softened, about two minutes.
  2. Secondly, add ground beef to the oil and break down into smaller pieces to brown. When ground meat is browned, add finely chopped mushrooms. Stir to combine.
  3. If making a vegetarian version, add black beans to the fry pan with onions and add mushrooms when beans are slightly heated.
  4. Add taco spice to meat or beans for a speedy flavouring.
  5. In a small bowl, smash avocados and add the juice of a lime. Add salt and pepper to taste.
  6. When meat/beans is cooked, remove from the fry pan and set aside in a bowl.
  7. Sauté bell pepper in fry pan with a small amount of oil. Add a pinch of salt to draw out flavours.
  8. Finally, warm the corn tortillas and serve with your choice of fixings!
