Broccoli and Cheddar Stuffed Chicken Breast

One of my all time favourite Julia Childquotes is, “You don’t have to cook fancy or complicated masterpieces – just good food from fresh ingredients.” I certainly could not agree with her statement more! However, there are times where you want to go a little above to achieve the “wow factor” from family members, guests or maybe just to impress yourself!I put together this recipe for Broccoli and Cheddar Stuffed Chicken Breast with my mom during our traditional cooking night. We served it with brown rice, a side of steamed broccoli and tossed salad.

Keep in mind, this is a recipe that has lots of versatility so feel encouraged to use whatever vegetables and cheese you like! It is much easier than you think; the main challenge is not over-stuffing the chicken.


  • Serves: 4
  • Prep time: 20 minutes
  • Cook time: 25-30 minutes

Ingredients:

  • 4 boneless chicken breasts, sliced in half and pounded
  • 1 cup broccoli, chopped into small bite size pieces
  • ¾ cup old cheddar, shredded
  • 1/2 cup flour
  • 1 egg, beaten
  • ¾ cup Italian seasoned bread crumbs
  • salt and pepper to taste

Directions for this Broccoli and Cheddar Stuffed Chicken Breast:

  1. Firstly, pre-heat oven to 375F.
  2. Secondly, laychicken breast flat and cut in half horizontally. Flatten with a pounder.
  3. Then, steam broccoli lightly in the microwave for 1 minute with a little bit of water. Drain excess water.
  4. Next, place a teaspoon of cheddar cheese and a teaspoon of broccoli in the centre of the chicken breast. Be careful not to over-stuff or it will be difficult to close!
  5. Tightly wrap the chicken breast around the vegetables and cheese filling centre and secure with a tooth-pick.
  6. Now, take your stuffed chicken breast and dredge it in flour to coat.
  7. Then transfer the chicken breast into a separate bowl containing the beaten egg.
  8. Last, transfer the chicken from the egg wash into the seasoned bread crumbs to coat.
  9. Finally, spray baking sheet with non-stick spray if needed and line up chicken breasts to bake. Cook for 25-30 minute or until there is no pink.
