These Cinnamon Pear Carrot Flax Muffins will make your Fall season extra delicious! This recipe was a happy occurrence that was inspired by ingredients in my fridge and the Banana Flax Oatmeal Muffins, a past favourite blog recipe. Nevertheless, for the last three weeks, my hubby and I were out of our condo during repairs. When we finally got home, I literally had ripe pears, large carrots and eggs in the fridge. Using up these ingredients to use up inspired this Cinnamon Pear & Carrot Flax Muffin recipe. You’ll ADORE it!

Boost Fibre in Muffins
Planning meals or snacks that contain extra fibre is a heart-healthy choice and helps in feeling full for longer. So adding flax seeds and pears (one of the highest fibre fruits) helped us boost the fibre count. Therefore, fibre works to slow digestion and acts like a sponge to absorb the bad cholesterol. Research shows that fibre may also help you maintain a healthy body weight and lower your risk of heart disease and some cancers like colon cancer. Furthermore, it has been found to be beneficial for blood sugar controlling, blood pressure lowering and it even helps with bowel regularity!

Cinnamon Pear Carrot Flax Muffins Recipe
- Serves: 12
- Prep time: 10-15 minutes
- Bake time: 20 minutes
Ingredients:
- 2-3 ripe, unpeeled pears, diced, reserve some pieces for muffin toppings before baking
- 1 large carrot, grated
- ¼ cup brown sugar
- 2 eggs
- 1/2 cup canola oil
- 1.5 cups all-purpose flour
- 1-2 tsp cinnamon
- ¼ cup ground flax seeds
- 1 tsp baking soda
- 1 tsp baking powder
- ¼ tsp of Kosher salt
Directions for Cinnamon Pear Carrot Flax Muffins:
- First, pre-heat oven to 375F.
- Beat eggs and add brown sugar, oil and carrot. Add pears and stir gently to combine.
- Next, in a separate bowl, combine dry ingredients and mix.
- Then, add the dry ingredients to the wet ingredients and stir to combine.
- Finally, grease muffin tins or use silicone or paper muffin cups. Fill 2/3 of the cup with batter. Place some pear pieces on top, if using.
- Bake in the oven for 15 to 20 minutes or until bottom is slightly browned. Use a toothpick to insert into muffin to check doneness; if toothpick comes out clean, they’re ready.

Ingredients
