Tis the season for batch baking! You will absolutely love this flavourful Coconut Christmas Granola to make over the holidays. For those who follow my blog and see my daily meals posted on Instagram (@DieteticDirections) you know that I am a cook but not a baker. This is because I find baking too rigid for my free spirit. Instead, I like to add whatever strikes me. However, when baking, it seems important to follow the recipe or risk items not turning out properly.

As a result, for my 10 Favourite Christmas Brunch Ideas blog, I wanted to challenge myself to include a fun and flavourful, high fibre granola to share with guests. Therefore, I created this recipe for another make-ahead option that can be served on top of plain Greek yogurt or mixed with high fibre cereal (look for over 5 grams of fibre per serving). In addition, you can double the recipe and then store granola in mason jars with a ribbon to give your friends or family as a tasty gift.

Warning: Delicious smells will fill your home with this recipe.


  • Prep time: 10 minutes
  • Cook time: ~ 20 minutes
  • Serves: 8-10

Ingredients:

  • 2 cup rolled oats
  • ½ cup pumpkin seeds, unsalted
  • ½ cup All Bran Buds (omit for gluten free)
  • ¼ cup shredded coconut, unsweetened
  • 2 tbsp chia seeds
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/3 cup canola oil
  • 1/3 cup maple syrup or honey for clusters
  • Pinch of Kosher salt

Optional: ¼ cup of craisins, raisins or dried cherries (added at the end when finished baking)

Directions for Coconut Christmas Granola:

  1. Pre-heat oven to 350F.
  2. Firstly, combine all ingredients except for craisins in a large bowl. Stir ingredients so they are well combined.
  3. On a parchment-lined baking sheet, spread the oat mixture evenly.
  4. Bake for 10 to 12 minutes and then give a soft toss of ingredients to prevent burning. Bake for another 10 minutes, until Christmas Granola is toasted and the cinnamon smells are wafting!
  5. Allow to cool before eating. Additionally, you can store in mason jars for breakfast toppers or gifts for others!
