Garlic Ricotta Dip with Roasted Tomatoes

It’s hard to believe the holiday season is fast approaching! 🎄This year, above all, I’m going for SIMPLICITY. As a result, this Garlic Ricotta Dip with Roasted Tomatoes made the list. Moreover, it’s low-key and a true crowd-pleaser.

What Does Simplicity Mean?
1. Few ingredients (this cuts down on food cost and long trips to grocery store gathering lots of items)
2. Minimal prep and cook time.
3. Staying in comfort zone to reduce pressure.

Here’s a simple and flavour-packed appetizer that’s certainly going to be a hit – Garlic Ricotta Dip. It’s a 5-ingredient dish and I topped mine with some roasted tomatoes for a festive pop of colour. Finally, serve with your favourite cracker or veggies. Additionally, you can also toast up baguettes or Naan bread with some oil and oregano.

Simple feels good. ❤️ Breathe deeply and focus on your wellness. Likewise, remember that food and meals don’t need to be a source of stress.

  • Prep Time: 5 minutes
  • Cook Time: 20-25 minutes
  • Serves: 4-6

Ingredients:

  • 475 grams Ricotta Cheese
  • 1-2 cloves garlic, minced
  • ¼ cup parmesan cheese
  • ¼ tsp oregano
  • Lemon, zested
  • 1 cup cherry tomatoes, whole
  • 1 tbsp olive oil
  • Salt and pepper

Garnish: Fresh Italian Parsley, or Green onions

Garlic Ricotta Dip Directions:

  1. Heat oven to 350F.
  2. Meanwhile, in a large bowl, combine ricotta cheese, garlic, parmesan, oregano and zested lemon. Stir ingredients to mix.
  3. Then, place garlic ricotta dip mixture in a non-stick baking dish. If desired, sprinkle extra parmesan cheese on top.
  4. Bake dip for 20 minutes until warm and bubbling.
  5. To roast tomatoes, line a baking sheet with parchment paper. Then, toss tomatoes lightly with olive oil and salt and pepper. Cook for about 20 minutes turning halfwary though.
  6. Finally, place cherry tomatoes on top along with Parsley or Green onions for garnish. Serve dip when it’s cooled.
