Rosemary Parsnip Fries
Who does not love oven fries? I do (confession: like most dietitians) but I also love roasted veggies! Still unsure what a dietitian is? Click this link to learn more. But now back to fries! I thought why not combine these two ideas to make something delectable! Just in time for Thanksgiving, I’m excited to share my Rosemary Parsnip Fries. Best part, the recipe is super easy and also uses only 3 ingredients.
If you haven’t roasted a lot of veggies before, you will find that roasting changes the taste to make them sweeter and savoury by caramelizing the natural sugars. - Serves: 2-4
- Prep time: 10 minutes
- Cook time: 20-30 minutes
Ingredients:
- 5-6 parsnips, peeled and cut into shape of fries
- 1 tbsp olive oil
- 1 tsp rosemary
- Salt and Pepper to taste
Directions for Rosemary Parsnip Fries:
- Firstly, pre-heat oven to 400F.
- Secondly, in a medium sized bowl, toss cut parsnips with oil, rosemary and some salt and pepper.
- Spread coated parsnips on a baking sheet lined with parchment paper or foil.
- Finally, bake for 20-30 minutes turning halfway through.
- Try to keep an eye on your parsnips, as they may begin to burn if your oven is really hot!
