Oven meals are the perfect way to keep the house nice and warm in the middle of winter. The best part? Your oven does all the work while you can simply wait for warm goodness to come out. In today’s recipe, we’re starring roasted red-skinned potatoes. Potatoes are a nutritious addition to your diet and contain lots of fibre, potassium, magnesium and vitamin C, to name a few.

Why is Potassium Important?

Potassium is an electrolyte or mineral that relaxes the arteries through the release of nitric oxide. As a result, this helps blood to travel to different parts of the body more easily and prevents cardiovascular disease caused by narrowed or blocked blood vessels. For instance, some benefits of potassium include:

  1. Lowers Blood pressure
  2. Promotes the release of sodium in the urine
  3. Reduces risk of death from cardiovascular disease and ischemic heart disease
  4. Protects against muscle loss associated with aging
  5. Preserves bone density
  6. Reduces risk of kidney stones

However, fewer than 2% of adults met the daily recommendations for potassium according to the third National Health Examination Survey. Therefore, it’s important to get enough of this nutrient through your diet and potatoes are certainly great source!

This rendition of roasted red-skinned potatoes also features the aromatic ingredients garlic and rosemary, which will add a mouth-watering smell to your kitchen. So, with that said, here’s a simple way to roast up some red-skinned potatoes!


  • Prep time: 10 minutes
  • Cook time: 40-50 minutes
  • Serves: 4

Ingredients:

  • 1.5 pound bag of baby red skinned potatoes, cut into quarters
  • 2-3 Tbsp olive oil
  • 3 cloves of garlic, minced (optional)
  • 1 Tbsp dried rosemary
  • Sprinkle salt
  • Fresh ground pepper

Directions for Roasted Red Skinned Potatoes with Garlic and Rosemary:

  1. Firstly, pre-heat the oven to 400 degrees.
  2. Meanwhile, clean potatoes and cut them into quarters.
  3. After that, add olive oil, garlic, rosemary, salt and pepper and toss to combine.
  4. Place coated potatoes onto a baking sheet lined with parchment paper.
  5. Finally, bake for 40-50 minutes until your desired level of crunch.

These roasted red-skinned potatoes with garlic and rosemary are packed with potassium, fibre, and Vitamin C for a toasty and nutritious winter meal. 

Ingredients

  • 1.5-pound bag of baby red-skinned potatoes, cut into quarters
  • 2-3 Tbsp olive oil
  • 3 cloves of garlic, minced (optional)
  • 1 Tbsp dried rosemary
  • Sprinkle salt
  • Fresh ground pepper
