Salmon with Walnut Parsley Gremolata
I’m always on the hunt for new ways to enjoy salmon! It’s just so succulent and perfect for our summer season. For today’s recipe, I made Salmon with Walnut Parsley Gremolata. Gremolata is a chopped herb condiment traditionally made using garlic, oil and lemon zest. You can certainly add gremolata on top of any type of fish, meat, savory dish like mashed potatoes, roasted veggies, pasta or even as a salad dressing! You can also be creative and add other types of nuts or herbs to change it up.
Health Canada recommends adults consume at leasttwo servings of fish per week. One serving is equal to 75 grams or 2 ½ ounces or half a cup of cooked fish. It is recommended to emphasize consumption of fatty fish, like salmon, herring, mackerel, sardines as these types are higher in omega 3’s. Ingredients:
- 2 salmon fillets (about 200 gram each), fresh or frozen
- salt and pepper seasoning
Gremolata:
- ½ cup fresh Italian parsley, chopped
- 2 tbsp fresh mint, chopped
- ¼ cup unsalted walnuts, roasted & chopped
- 1-2 tbsp olive oil
- 1 clove garlic, minced
- squeeze of lemon juice
- sprinkle of salt
Directions for Salmon with Walnut Parsley Gremolata:
- Firstly, season salmon fillet with salt and pepper.
- Secondly, in a medium bowl, combine parsley, mint, walnuts, oil, garlic, lemon and salt to form your gremolata. Set aside.
- In a fry pan on medium heat, heat olive oil. Add salmon fillet to oil when hot and you can hear a sizzle when placing on the heat. Cook salmon fillet for about 3 minutes on each side, ideally turning once.
- Add gremolata mixture to the frying pan to heat up the mixture slightly.
- Finally, serve gremolata mixture over top salmon fillet. Garnish with extra parsley and lemon wedge.
