Want to save time cooking? Who doesn’t? A handy trick to maximize cooking is to add a tray of chickpeas when your oven is hot. This way, during the fall/winter you can both warm up your place and also prepare more items at the same time! Why? Thyme Roasted Chickpeas are easy to prepare and taste great as a salad topper, snacks or entree side dish. Why not?

Here’s my Thyme Roasted Chickpeas recipe for a simple, filling and crunchy snack to take with you on those busy days.


  • Serves: 4-6
  • Prep time: 5 minutes
  • Cook time: 40- 45 minutes

Ingredients:

  • 1 can (540mL) no salt added chickpeas, rinsed and drained
  • 2 tbsp canola oil
  • ½ tsp dried thyme
  • Sprinkle Kosher salt & fresh ground pepper

Directions for Thyme Roasted Chickpeas:

  1. Firstly, pre-heat oven to 400F.
  2. Next, combine chickpeas, oil, thyme, pepper and salt and toss to coat.
  3. Spread chickpeas evenly over a parchment-lined baking sheet.
  4. Bake for 40-45 minutes, stirring them after about 20 minutes.
  5. Finally, remove from oven and allow to cool. Enjoy!
