Are you seeking creative ways to use your garden herbs?  Well, look no further than tossing them into your salads! I’ve certainly been loving this Blueberry, Feta and Mint salad, which combines sweet, salty and crunch. This will be a true family favourite! Additionally, I recommend cutting up your greens in advance for speedy salad assembly.

I planted my first herb garden in 2017. The idea came after feeling frustrated going to the grocery store to buy separate herbs and having them go bad before I could use them. Top 5 Reasons to Enjoy Garden Herbs:

  1. Convenience of having them easily accessible instead of going to grocery store.
  2. Powerful flavour boosters to dishes, which also allows you to cut back on salt.
  3. Add a punch of colour to your foods for appealing presentation.
  4. Herbs contain polyphenols, which are plant antioxidants, helpful for fighting diseases like cancer and heart disease.
  5. Bright green-coloured herbs also contain vitamins, A, C and K along with potassium and folate.

  • Prep time: 15 minutes
  • Serves: 4

Ingredients:

  • 4 cups mixed salad greens,washed
  • 1 cupblueberries
  • 1/3 cup feta cheese,cubed
  • 3 Tbspsunflower seeds, unsalted
  • 2 Tbsp olive oil
  • 1 Tbsp balsamic vinegar

Optional: Drizzle aged balsamic along top of salad

Instructions for Blueberry Feta & Mint Salad:

  1. Firstly, clean salad greens and place into large bowl.
  2. Secondly, add berries, cheese, and seeds on top of salad greens.
  3. Drizzle greens and toppings with olive oil and balsamic vinegar.
  4. Finally, toss to combine.

  • 1 cup blueberries
  • 1/3 cup feta cheese, cubed
  • 3 Tbsp sunflower seeds, unsalted
  • 2 Tbsp olive oil
