Avocado, Black Bean & Lentil Salad
Avocado, Black Bean & Lentil Salad – This recipe is dedicated to those searching for an easy recipe that uses heart-healthy lentils! Both gluten free and vegetarian, this dish can be served as a side salad or as a main dish along with a piece of fresh fruit.

Ingredients:
- 540mL (1) can of lentils, rinsed and drained
- 1- 540mL can of black beans, rinsed and drained
- 1 avocado, chopped into large chunks
- ¼ cup red onion, chopped fine
- 1 cup of tomatoes, diced
- ½ cup red or green peppers, chopped
- 1 cup cucumber, diced
- ½ cup feta cheese, cubed or crumbled
- ¼ fresh parsley, chopped
- ¼ cup olive oil
- 2 Tbsp of red wine vinegar
- ½ tsp dried oregano
Instructions:
- In a large bowl, combine lentils, black beans and veggies.
- Whisk olive oil, vinegar and oregano together.
- Add fresh parsley to large bowl along with dressing.
- Toss salad to coat.
