BBQ Chicken Flatbread is the perfect summer meal! It’s super versatile to include whatever veggies you have left over, cheeses you love and of course a variety of protein possibilities! This summer, an evening after golf, my husband and I whipped up this BBQ Chicken Flatbread recipe in only 15 minutes! Then, we then tossed them on the grill for that crispy bottom and nice melted topping. Who doesn’t love BBQ pizzas?

Planned Leftovers

If you are an avid Dietetic Directions blog reader or Instagram follower, you know that I am obsessed with BATCH COOKING! This is also known as planning leftovers for future meals. Therefore, when making these BBQ Chicken Flatbreads, we doubled our batch to ensure we had lunches for the next day. Remember, facilitating healthy eating takes a little planning ahead so wholesome options become more convenient. Importantly, this means we are less likely to eat out and more likely to include extra veggies and fibre at meals.

Planned leftovers could also mean that when you are making chicken on the BBQ, you are making double or triple the amount and then freezing it for future meals. I used leftover BBQ chicken for this Grilled Veggie & Chicken Pasta Salad. Similarly, we really enjoy batching pulled pork in the Instant Pot or Slow Cooker and freezing extras. Consequently, you can pull it out and use it for your grilled flatbreads or Easy Naan Pizza in the oven. BBQ Chicken Flatbread Recipe


  • Serves: 4
  • Cook time:5 – 10 minutes
  • Prep time:10 minutes

Ingredients

  • 5 pieces of whole grain or garlic naan bread
  • 3 large chicken pieces, pulled apart
  • 4 Tbsp BBQ sauce or pizza sauce
  • Sprinkle oregano, dried
  • 3 mushrooms, sliced
  • ¼ pepper, sliced
  • ½ tomato, sliced
  • Bunch of arugula
  • ½ cup mozzarella or cheddar cheese, grated

Optional: Garnish with fresh Italian parsley and basil

BBQ Chicken Flatbread Directions:

  1. Firstly, pre-heat the BBQ to around 375-400F.
  2. Secondly, cut and clean veggies of choice. Grate cheese.
  3. Spread BBQ sauce on top of naan bread. Sprinkle dried oregano.
  4. Then, top pizza with arugula, cheese, chicken and veggies.
  5. Finally, close the grill and cook for about 5 to 10 minutes; or until cheese is melted and crust is crisp.
  6. Remove from the grill, slice, garnish and serve hot.
