Simplicity is key. Food does not have to be complicated to be nourishing and delicious. This Skyr Yogurt Parfait is currently one of my favourite pregnancy snacks. Additionally, it gives me a nice boost of protein and calcium. In fact, I wrote an entire blog all on Skyr Nutrition and compared its nutrition to regular yogurt, Greek yogurt and other dairy products.

What is Skyr?

It’s a thick, creamy yogurt that’s been around for over a thousand years! Nevertheless, skyr is becoming increasingly popular and more available at your local grocery stores. Furthermore, skyr supports bone health and heart health. This includes supporting healthy blood pressure and skyr may even help in regulating blood sugars.

How to Pack a Nutritious Snack?

When you are planning a snack, it’s key to balance carbohydrates (body’s preferred energy source) with a protein, which helps to slow the release of sugar and helps us to feel full for longer. Fibre (like in those chia seeds) helps to also slow digestion, improves bowel regularity and lowers cholesterol and blood pressure. This Skyr Yogurt Parfait provides fresh fruit (blueberries) for the carbohydrate, skyr for protein and bumps up fibre with chia seeds. Plus, I add a little maple syrup just to kick sweetness up a little since the yogurt is unsweetened.

Ingredients

  • ¾ cup Skyr yogurt, unsweetened
  • ½ cup blueberries
  • 1 tbsp chia seeds
  • 1 tsp pure, Canadian maple syrup

Instructions

    1. Combine all ingredients in your favourite dish.
    2. Stir together and enjoy your snack!
