Crunchy Asparagus with Garlic & Parmesan

Roasting is a simple way to cook extremely flavourful veggies! In my last blog, I explored the numerous nutrition benefits to having your veggies roasted opposed to raw or boiled. As a recap, I like roasting vegetables because it uses dry heat and does not require any water, therefore minimizing nutrient loss. Roasting also helps to preserve more nutrients than boiling, not to mention the delicious taste, crunch, and easy preparation. Thus, I put together this Crunchy Asparagus with Garlic and Parmesan recipe in a matter of minutes when a friend was visiting for dinner.

Asparagus also boasts high levels of vitamin K, vitamin A, folate and fibre while being low in calories. For instance, a 1/2 cup serving of asparagus is only 20 calories yet fulfills 57% of the RDI (recommended daily value) of vitamin K.

We wanted to roast asparagus, instead of steaming them, to enjoy the extra flavour of garlic and parmesan along with an exceptional crunch, and I’m happy we did. They turned out so well that I knew I had to share it! Most importantly, roasting recipes are great because your oven does all the work. Hope you enjoy this recipe!


  • Serves: 4
  • Prep time: 10 minutes
  • Cook time: 10-12 minutes

Ingredients:

  • 15-20 asparagus spears, snap the ends off
  • Drizzle with olive oil, about1-2 Tbsp
  • 1-2 cloves garlic, minced
  • 2 Tbsp parmesan cheese
  • Sprinkle salt
  • Sprinkle fresh ground pepper

Directions for Crunchy Asparagus with Garlic & Parmesan:

  1. Pre-heat oven to 400 F
  2. Wash asparagus spears in cold water and snap off ends. Dry asparagus and set into a large mixing bowl.
  3. Add olive oil, minced garlic, parmesan cheese and salt and pepper into the mixing bowl with asparagus.
  4. Toss ingredients to coat the asparagus spears.
  5. Line a baking sheet with parchment paper, spread the coated asparagus spears.
  6. Bake for 10-12 minutes, flipping once halfway through cooking.
