Curry Egg Salad with Apples, Walnuts & Craisins
The Spanish word for appetizers or snacks is “tapas”. Meals that are “tapas-style” allow you to enjoy a variety of different tastes while sharing meals with friends. The small plates included in tapas are certainly ideal for backyard parties, bridal showers, or picnics. This Curry Egg Salad recipe is packed with flavour, crunch, and sweetness. Above all, this recipe is well-balanced and completely customizable! For example, serve on mini pitas or whole grain crackers for a great snack! Additionally, it makes for a delicious meal on a wrap!
Curry powder is actually a mix of spices, usually a combination of coriander, cumin, turmeric, ginger, mustard, fenugreek, cinnamon, clove, cardamom, chilies and black pepper. Ingredients:
- 6 hard-boiled eggs (see here for making perfect hard-boiled egg)
- ¼ cup low-fat mayonnaise
- ½ tsp curry powder
- 1 medium apple, diced with skin on
- 1 long celery stick, chopped
- 3 tbsp craisins or raisins
- ¼ cup unsalted walnuts, roasted, chopped
- Salt and pepper to taste
- Garnish with fresh cilantro or parsley
- Serve on whole grain pitas, crackers or gluten free alternatives!
Directions for Curry Egg Salad:
- Firstly, peel and chop cooled hard-boiled eggs into small pieces and place in a medium-sized mixing bowl.
- Secondly, add mayonnaise, curry powder, apple pieces, celery, craisins and walnuts. Mix together to combine ingredients.
- Serve on top of mini pitas or whole-grain crackers.
- Finally, garnish with fresh cilantro or parsley.
