This fresh Grape and Feta Kale Salad combines sweet and salty to createadelicious dishthat is sure to impress just about anyone. While it might seem unfamiliar to combine grape with feta, I hope today’s recipe inspires you to try something outside your comfort zone. Above all, adding new recipes to your repertoire boosts cooking confidence so that you donot fear failure. I’d like to share one of my favourite quotes by Julia Child,“The only real stumbling block is fear of failure. In cooking you’ve got to have a what-the-hell attitude.” So, with that in mind, let’s jump into today’s recipe!

  • Serves: 2
  • Prep time: 10 minutes

Ingredients:

  • 4 cups kale, stems removed & chopped
  • 1 cup red seedless grapes, cut in half
  • 1/3 cup feta cheese, crumbled
  • 3 Tbsp unsalted sunflower seeds
  • 3 Tbsp raisins
  • 2 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • pinch of salt if needed

Tip: I added Tbsp of orange juice into salad for added zing!

Directions for this Grape and Feta Kale Salad:

  1. Firstly, cut off stems and the tough middle pieces on kale. Then, chop into bite size pieces. Clean kale leaves and dry in a salad spinner.
  2. Secondly, in a large salad bowl place kale leaves, grapes, feta, sunflower seeds, and raisins.
  3. Thirdly, drizzle oil and balsamic vinegar over salad and toppings. Afterwards, toss salad to combine ingredients. You want the kale leaves to be coated lightly.
  4. Finally, finish with squeeze of extra orange juice from orange peel.

Kitchen tip:Always taste your foods during cooking and especially before serving! This way you can add more of something to suit your taste. You might find you prefer more oil or vinegar in this salad.
