Happy International Nut day! Go nuts today (and everyday) by including these healthy plant-based fats, protein-packed wonders in your diet. This apple, walnut, and feta salad features the sweetness of apples and dried fruit but with the saltiness of feta cheese. I use a simple olive oil and balsamic dressing and, above all, a topping of walnuts to add crunch.

One of my favourite ways to consume my ¼ cup of nuts is by sprinkling them on salads! As I shared in my post on the power of protein, you should certainly include a protein source ateachmeal to consistently stimulate protein synthesis. However, your source of protein is also important to consider. For instance, dietary protein sources, compared to protein powders, arejust as (if not more) effective for muscle growth and recovery compared to while providing other essential vitamins and minerals.

Autumn Apple Salad with Maple Vinaigrette

  • Serves: 4

Ingredients:

  • 4 cups salad greens (Endive, green leaf, romaine), chopped
  • 1 red apple, unpeeled and chopped
  • 1/3 cup feta cheese, cubed
  • 3 Tbsp craisins or raisins
  • ¼ cup roasted, unsalted walnuts
  • 2 Tbsp olive oil
  • 1 Tbsp balsamic vinegar

Directions for this Apple, Walnut, and Feta Salad:

  1. Firstly, chop and clean lettuce and place into large bowl.
  2. Secondly, add chopped apple, feta, craisins on top of salad greens.
  3. After that, toast walnuts in the microwave for 30-60 seconds to boost flavour. Top salad with roasted walnuts.
  4. Finally, drizzle olive oil and balsamic vinegar over salad greens and toss to combine. Add more dressing as desired to lightly coat your ingredients.

This apple walnut and feta salad is perfect for this autumn season. It's packed with plant-fat and protein so your body will love it too!

Ingredients

  • 4 Cups salad greens (Endive, green leaf, romaine), chopped
