Grilled Dijon Chicken & Swiss Sandwich
Are your sandwiches boring? Mine certainly used to be. Until I realized that it does not take a lot to bump up the fun-factor. Try swapping the bread for something different (wraps, pitas, buns mini rounds, etc). You can even use lettuce wraps for a gluten-free option! In addition, use a unique cheese, add a punch of flavour with ingredients like sun-dried tomatoes, pickles, roasted peppers, pesto, garlic aioli or hummus!. For example, I am a spice fan and loving pickled jalapeños right now. Today’s recipe is a Grilled Dijon Chicken & Swiss Sandwich. I was going for a grilled cheese sandwich but decided to add a few extra veggies, Swiss cheese and Dijon mustard. YUM!
Ingredients:
- 2 slices of bread – whole grain/rye/gluten free
- 1 Tbsp Dijon mustard
- 1 Tbsp margarine, spread over one side of bread facing outward
- 3-4 slices of roast chicken breast, thinly sliced
- 1-2 slices of Swiss cheese
- 5 leaves of spinach
- 2 Tbsp of raddichio
- 5 slices of cucumber
- 5 cherry tomatoes, thinly sliced
Directions for Grilled Dijon Chicken Sandwich:
- Firstly, on the inside of two pieces of bread, spread Dijon mustard.
- Secondly, place a piece of Swiss cheese over the Dijon.
- Add in your veggie and meat slices.
- Spread a thin layer of margarine or butter on the outside-facing piece of bread.
- On medium-heat, place margarine-side facing down in a medium-sized fry pan. Heat sandwich about 3 minutes on one side before turning. If you have a panini press, you can also use this instead.
- Flip your sandwich so that the other side of the sandwich heats and browns lightly.
- Serve with ketchup and fresh cut veggies.
