Hello my fellow Homemade Caesar Salad Dressing fans!

Homemade is always better! Right? This is why I’ve been working away trying to create a truly outstanding Caesar Salad dressing for the Dietetic Directions blog.Happy to say that I’ve finally got it!

Ready to make Homemade Caesar Salad Dressing!

You’ll need romaine lettuce, a grainy bread for homemade croutons, lemon and parmesan to name a few ingredients. My Homemade Caesar Salad Dressing is authentic with egg yolk and anchovies, which really allow for the creamy and robust flavour of a true Caesar. Don’t shy away from the anchovies! Nevertheless, Homemade Caesar Salad Dressings are a little extra effort than store bought but I assure you that it’ll be so worth it!

✅Keep the leftover Caesar dressing in a mason jar. Give it a shake before using.
✅Enjoy different proteins like shrimp, chicken, bacon or chickpeas on top.
✅Add your Caesar Salad with protein choice to a Naan or pita bread for a fantastic meal idea.😋

  • Prep Time: 5 minutes
  • Serves: 4-6

Ingredients:

Toppings:

  • Bacon, prosciutto or shrimp, chicken, chickpeas
  • Real chunks of parmesan cheese
  • Romaine hearts, leaves separated

Croutons:

  • Tbsp olive oil
  • 2 pieces of the ends of bread, 1” pieces
  • Spices you love – oregano, jerk spice, salt and pepper (coat them to desired level)

Love homemade croutons for salad! They don’t need to be intimidating!

Directions Homemade Caesar Salad Dressing:

  1. In a bowl, whisk together chopped garlic, anchovies, Dijon mustard, Worcestershire sauce, lemon and egg yolk. 
  2. Then, add drop by drop canola oil. Continue whisking until dressing is thick and glossy. 
  3. Next, season with salt and pepper and perhaps extra lemon, if desired. Lastly, set aside in mason jar for your homemade Caesar Salad Dressing. 
  4. When ready to serve, break romaine into bite-size pieces, then mix with caesar dressing.
  5. If making your own croutons, can either toss the cubed bread in oil and then bake in the oven at 375F for about 10-15 minutes until golden brown, flipping halfway to prevent burning. Alternatively, you can also make your croutons by tossing bread with oil and spices and heating through on a fry pan. Leave at room temperature to cool. 
  6. Finally, choose protein to top your Caesar Salad – I love heating up prosciutto on a pan instead of bacon. Another option is to use cooked chicken, shrimp or warmed chickpeas!

Ingredients

  • 2 cloves garlic, minced
  • ¼ tsp anchovy paste
  • 1 tsp Dijon mustard
  • ½ tsp Worcestershire sauce (LINK)
  • 1 egg yolk (here’s how to remove a yolk- LINK)
  • ½ cup canola oil
  • ½ lemon (2 tbsp)
  • Parm on top. S& P
