The freshness of Spring calls for crisp salads. For instance, this Mango & Kale Salad! I certainly love adding fresh fruit and nuts or seeds to my salads for extra sweetness and crunch. When faced with a busy schedule, planning ahead might include chopping kale and placing it in a clear container or a plastic bag with a paper towel. Salads are perfect for picnics and potlucks as the weather begins to warm up.   • Prep time: 10 minutes
  • Serves: 2

Ingredients:

  • 4 cups kale,chopped and washed
  • 1 cup mango, sliced
  • 3 Tbsp sunflower seeds, unsalted
  • 3 Tbsp craisins
  • 2 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • Sprinkle salt

Optional: Drizzle aged balsamic along top of salad

Instructions for Mango & Kale Salad:

  1. Firstly, clean salad greens and place into large bowl.
  2. Secondly, add mango, seeds and craisins on top of salad.
  3. Drizzle with olive oil and balsamic vinegar. I usually add a sprinkle of salt.
  4. Finally, toss to combine.
  5. Additionally, finish with aged balsamic drizzle, if desired.
