Roasted Green Beans with Mushrooms
Hello Fall season. And hello Roasted Green Beans & Mushrooms with Feta! Without a doubt, we are thrilled to take out those sheet pans and get ready to roast our veggies again. Gotta love roasted veggies, there’s just so much flavour. Consequently, you’ll be sure to enjoy these Roasted Green Beans & Mushrooms with Feta. So simple. And so good!
FYI: Green beans are one of the quickest vegetables to roast! They take only about 15 minutes and the caramelization intensifies the flavours.
What’s Roasting?
Roasting simply means to cook in an oven using dry heat. I’m a big fan of roasting veggies (see my past blog post on how to roast veggies). This is because roasting browns the surface of the food, which leads to new caramelized flavours and intensified aromas!
Additionally, for a flavour variation, you could squeeze lemon at the end (instead of balsamic drizzle) for a pop of zesty flavour.
Roasted Green Beans with Mushrooms Recipe
- Prep Time: 5 – 10 minutes
- Cook Time: 12 – 18 minutes
- Serves: 2 – 4
Ingredients:
- 2 cups fresh green beans, cleaned and cut
- 1 cup mushrooms, cleaned and sliced
- 1-2 tbsp olive oil
- Sprinkle of Kosher salt
- Fresh ground pepper
Garnish: Crumbled feta & balsamic glaze
Roasted Green Beans with Mushrooms Directions:
- Firstly, Pre-heat oven to 425F.
- Clean, cut and dry beans and mushrooms.
- Toss veggies with oil to lightly coat and sprinkle Kosher salt and fresh ground pepper.
- Then, line a baking sheet with parchment paper and spread the veggies evenly. Be careful not to overcrowd your baking sheet.
- Roast Green Beans with Mushrooms for 15-18 minutes. Turn halfway during cooking to prevent burning. Cook until golden brown with caramelization. And always be sure to taste test to ensure they are tender and crisp and seasoned to your liking.
- Finally, garnish with crumbled feta cheese and drizzle of balsamic glaze!
