Tis the season for getting together with loved ones and enjoying delicious foods, like these Snowy Peanut Butter & Flax Energy Balls. However, in the midst of a global COVID pandemic, things are looking a little different this year. We might be gathering only with our household or if we live alone, joining another household. Nevertheless, with the stress of the pandemic, simplicity is where it’s at.

These Snowy Peanut Butter & Flax Energy Balls use only 6-ingredients and can be made ahead of time. This allows for ease and uncomplicatedness. Additionally, these Energy Balls are also a no-bake recipe so no need to even heat the oven!

Peanut Butter Flax Energy Balls

Be sure to use your favourite peanut butter or alternative nut butter. I added craisins to mine for a little festive red punch of colour. I also added ground flax to boost the dietary fibre, which is good for digestion, heart hearth and blood sugar control. Flax is a high dietary source of lignans, which are fibre-associated plant compounds that act as precursors for phytoestrogens. In fact, flax is one of the highest sources of lignans and has been linked to a decreased risk for heart disease, blood pressure and inflammation.

If you store these Snowy Peanut Butter & Flax Energy Balls in your freezer, then you’re ready to bring them out to enjoy when desired. Or leave some for Santa instead of traditional cookies 🎅


  • Prep Time: 5 Minutes
  • Serves: 6-8

Ingredients:

  • 1 cup peanut butter or alternative seed butter
  • 1 cup oats
  • ½ cup ground flax
  • 1/2 cup honey
  • 3 tbsp craisins
  • Sprinkling of Shredded Coconut, unsweetened

Snowy Peanut Butter & Flax Energy Balls Directions:

  1. In a large bowl, combine peanut butter, oats, flax, honey and craisins.
  2. Stir to combine all ingredients.
  3. Using a tablespoon, scoop from mixture and use hands to shape into a ball.
  4. If wanting a snowy look, roll Christmas Energy Balls in coconut and place in glass container on parchment paper.
  5. Allow Christmas Energy Balls to chill in the fridge or freezer 20 minutes before serving. Can also store in the freezer and serve when desired.

Ingredients

  • 1 cup peanut butter or alternative seed butter

  • 1/3 cup cup honey
  • 3 tbsp craisins
  • Shredded Coconut, unsweetened

Instructions

    1. In a large bowl, combine peanut butter, oats, flax, honey and craisins.
    2. Stir to combine all ingredients.
    3. Using a tablespoon, scoop from mixture and use hands to shape into a ball.
    4. If wanting a snowy look, roll Christmas Energy Balls in coconut and place in glass container or parchment paper.
