This Warm Kale Salad with Peaches is flavourful and simple to assemble. Plus, it’s the perfect way to celebrate summer peach season! In fact, peaches are only in season in Ontario, Canada from July until September. Therefore, let’s enjoy them in our cooking while we can or preserve them for later.

What’s the Nutrition of Peaches?

A medium peach contains only 50 calories but also 15% of our daily vitamin C, 2 grams of fibre along with 6% of our daily vitamin A supporting eye and skin health. Importantly, including naturally sweet, plant-based antioxidants in our diets also supports heart health and lowers risk of lung and oral cancer.

Ever Tried a Warmed Kale Salad?

If you have not yet tried a warm kale salad you are missing out! A member of the broccoli, brussels sprouts and cauliflower family, kale is rich in vitamin A, vitamin C, vitamin K, calcium, potassium and manganese. When cooked on a non-stick fry pan, we shrink the kale down and make it crispy. Think of a similar idea to Kale Chips (see our recipe) but on a fry pan. They are savoury and completely poppable. Since I’m currently pregnant, this warm salad is more digestible since my stomach is smaller with the growing baby. Furthermore, heating kale helps us consume more volume of veggies instead of eating a raw salad. However, both ways are delicious!

Cooking kale can also make it easier to digest for those prone to bloating with higher fibre foods. Nevertheless, the key to boosting your intake of veggies is to consume them in ways that taste great. Likewise, this Warm Kale Salad with Peaches is a crowd-pleasing way to enjoy those antioxidants. In fact, kale has 45 different flavonoids or plant-based antioxidants.

Warm Kale Salad with Peaches Recipe


  • Serves: 1
  • Prep Time: 5 minutes
  • Cook Time: 5 minutes

Ingredients:

  • 1 – 2 tbsp olive oil
  • 2 cups of kale, chopped and cleaned
  • Kosher salt
  • 1 peach, sliced
  • 2 tbsp unsalted seeds (I used both sesame and pumpkin seeds.)
  • 1 tbsp craisins or raisins
  • Drizzle of balsamic glaze

Warm Kale Salad with Peaches Directions:

  1. Firstly, use a medium sized pan and heat to medium-high heat. Add olive oil to pan.
  2. Toss in kale and stir to coat in oil. Stir kale after 2 minutes to prevent burning. Add pinch of Kosher salt. Add more oil if pan becomes dry. Cook kale for about 5 minutes until bright green coloured.
  3. Remove kale from the heat and transfer onto a large salad plate.
  4. Then, top warmed greens with fresh, sliced peaches.
  5. Next, sprinkle craisins and seeds on top.
  6. Finally, drizzle with balsamic glaze. Taste to adjust seasoning to your preference.
