It’s almost back to school time and I know school lunches are certainly top of mind. Therefore, what can you make for you and your child that’s quick, delicious and nutritious? Look no further than this simple Kid-Friendly Bean Salad with feta cheese! This lunch is easy to make, healthy and above all, is perfect for child helpers. I recommend assembling the evening before so flavours have a chance to marinate and to avoid the morning rush. You can master packed lunches by prioritizing planning, stocking up on lunchbox essentials and considering a mental shift from performance to consistency. This makes the lunch-making process less daunting and a more sustainable habit!

Did you know beans contain non-heme iron? Non-Heme Iron is less well absorbed (around 3 to 20% absorption) but much more abundant form of dietary iron. It’s found primarily in plant foods (legumes, grains, nuts, seeds, some vegetables) along with iron-fortified foods such as infant cereals. Ingredients:

  • 1 can (540mL) chickpeas, rinsed and drained
  • 1 can (540mL) black beans, rinsed and drained
  • 1 coloured pepper, chopped
  • ½ cucumber,chopped
  • 1 cup cherry tomatoes,halved
  • ½ cup feta cheese, chopped into cubes
  • ¼ cup fresh parsley
  • ¼ cup olive oil
  • 2 tbsp red wine vinegar
  • ¼ tsp oregano

Instructions for Kid-Friendly Bean Salad:

  1. Firstly, in a large bowl combine can of rinsed and drained chickpeas and black beans.
  2. Secondly, add fresh cut veggies to the bean mixture.
  3. Add olive oil, vinegar and oregano.
  4. Add feta cheese and parsley to beans and veggies.
  5. Finally, toss to combine all ingredients.
