Yesterday, I had cherry tomatoes and cucumber that needed to be used up. Therefore, I simply opened a can of Romano beans, rinsed them and tossed in tomatoes, cucumber and some crumbled feta. The dressing is a simple olive oil and red wine vinegar, however, you can use whatever vinegar you have on hand.

5-Minute Romano Bean Salad Recipe


  • Serves: 4-6
  • Prep time: 5 minutes

Ingredients:

  • 1 can (540mL) Romano Beans, rinsed and drained
  • 2 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • 1/4 cup tomatoes, diced
  • 1/2 cup cucumbers, sliced
  • 3 tbsp feta cheese, crumbled
  • 2 Tbsp Italian parsley, freshly chopped

Directions for 5-Minute Romano Bean Salad:

  1. Firstly, in a large bowl combine Romano beans with veggies, feta cheese and olive oil, red wine vinegar and fresh parsley.
  2. Then, stir to combine ingredients and flavours.
  3. Enjoy!
