It’s back-to-school in an especially uncertain time during the COVID pandemic. Nevertheless, this Banana Flax Oatmeal Muffins recipe remains an ideal make-ahead lunch for those busy mornings. Consequently, I decided to post a new muffin recipe on the blog because I love having them in the freezer for when I’m too busy to make lunches. Therefore, you simply toss a Banana Flax Oatmeal muffin (or two) into a bento box, add some protein (hard-boiled eggs, lupini beans, Greek yogurt, edamame, some fresh fruit and veggies and you’re off!

This muffin recipe uses fibre-boosting ingredients with whole wheat flour, ground flax seed and whole grain oats. Morever, enjoying higher fibre foods helps with feeling full for longer, lowering cholesterol, and controlling blood sugars. Additionally, I have frozen bananas (leftover brown ones) that I use for extra sweetness and to add moisture. If you love even more sweetness, you can certainly toss in some dark chocolate chips.

Finally, label your muffins in a plastic freezer bag or glass sealed container. These last in the freezer for about three to four months. You now have flexibility to have healthy and delicious muffins ready when you need them for lunches, snacks or even part of breakfast.

  • Serves: 12
  • Prep time: 15 minutes
  • Bake time: 20 minutes

Ingredients:

  • 4 mashed ripe bananas, thawed
  • ½ cup brown sugar
  • 1egg
  • ¼ cup margarine or butter
  • 1 cupwhole-wheat flour
  • ¼ cup ground flax seeds
  • ¼ cup oats
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp of Kosher salt

Optional: 1/3 cup of dark chocolate chips

Directions for Banana Flax Oatmeal Muffins:

  1. Pre-heat the oven to 375 F.
  2. Meanwhile, in a medium bowl, mash bananas using a fork.
  3. Next, add brown sugar, margarine and 1 slightly beaten egg with mashed bananas and mix to combine.
  4. In a separate bowl, combine all dry ingredients and stir.
  5. Add chocolate chips and mix gently until combined.
  6. Fill paper-lined muffin tins 2/3 full with batter. Sprinkle a few whole oats on top of the batter.
  7. Finally, bake for 20 minutes. Use a toothpick to insert into muffin to check doneness; if toothpick comes out clean, they’re ready.

Ingredients
