BBQ Sweet Potatoes & Feta
BBQ Season has officially begun! The time of year when the good ol’ grill gets the most use. At Dietetic Directions, when we mention BBQ meal options to clients, we universally get a smile. This is because people simply LOVE BBQ’ing. It’s fast, it’s easy and it’s oh-so-delicious. Additionally, a backyard BBQ can include a variety of foods, many of which you may not have thought to grill, such as sweet potato. This year I made BBQ Sweet Potatoes & Feta cheese for the first time and they were spectacular!
This BBQ Sweet Potatoes & Feta recipe will not only dazzle your taste buds, but it will also boost your beta carotene intake. - Servings: 2-3
- Prep Time: 5 minutes
- Cook Time: 8-10 minutes
Ingredients:
- 2 medium sweet potatoes, skin peeled if desired
- 1 tbsp olive oil or canola oil
- Sprinkle of Kosher salt and fresh cracked pepper
- 3 tbsp feta cheese, crumbled
- Italian parsley and balsamic glaze for garnish
Directions for BBQ Sweet Potatoes & Feta:
- Cut sweet potato lengthwise into ¼” thick slices. In a medium-sized bowl, toss sliced sweet potatoes with oil and season with salt and pepper.
- Warm BBQ to medium-high heat and grill sliced, seasoned sweet potatoes about 4 minutes a side until you have nice grill marks.
- Finally, serve sweet potatoes topped with crumbled feta cheese, Italian parsley and balsamic glaze.
