Crispy Herb Roasted Potatoes

Easter is right around the corner and my family always has Crispy Herb Roasted Potatoes on the menu. However, this year we are celebrating virtually and social distancing. I am still making our family favourites and we can eat our separate meals together. I hope you enjoy this recipe as much as we do.

From a nutrition standpoint, potatoes can still fit as part of a healthy diet. In fact, we receive more potassium in a medium potato than we do in a banana. We also receive fibre, vitamin C, magnesium and lysine in potatoes. Click here for more heart-healthy, potassium-rich foods. Ingredients:

  • 1.5 pound bag of baby red skinned potatoes, cut into quarters
  • 3-4 Tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • ½ tsp dried paprika (or smoked paprika)
  • ½ tsp of Kosher salt
  • Fresh ground pepper to taste

Optional: Zest of fresh lemon

Directions for Crispy Herb Roasted Potatoes:

  1. Pre-heat the oven to 450 degrees.
  2. Clean potatoes and cut into quarters.
  3. Add olive oil, oregano, rosemary, paprika, Kosher salt and fresh ground pepper and optional lemon zest to potatoes. Toss to combine.
  4. Place herb-coated potatoes onto a baking sheet lined with parchment paper.
  5. Bake for 40-50 minutes until your desired level of crunch.
  6. Serve with tzatziki, ketchup or a sriracha ketchup-mix.
