Easiest Dijon Dill Haddock

Are you a fish fan? I definitely am. However, cooking fish can definitely intimidate. That’s why I came up with my Easiest Dijon Dill Haddock. It’s a tasty protein that’s ready in under 15 minutes (start to finish) and tastes as good as it sounds.

When I choose fish I generally opt for frozen, individually sealed fillets. This way your fillet(s) can be pulled from the freezer and the air-sealed pouch can be submerged in cold water for an hour to thaw. You can also move your sealed fish fillets from the freezer into the fridge the night before so they can thaw overnight. If you prefer using fresh fish that’s great too – just don’t fall for the belief that ‘fresh fish’ is fresher than frozen fish because it’s often not. Freezing fish soon after catching keeps it fresher.

Cooking Fish Tips

The most important thing about cooking fish is to ensure your fish is DRY before adding your Dijon mustard and panko. This guarantees a nice crust. You can dry fish by patting it with a paper towel. Another fish-cooking secret is to heat the pan before adding the oil to help prevent sticking. However, you don’t want to over-heat the oil either. Ultimately, we are going for a nice light sizzle when the fillet makes contact with the oil.

I use grainy Dijon mustard because I love the taste but use what you have/like. I also had fresh Dill in my kitchen so added this and it was terrific. In the past, I have used dried oregano or basil. Additionally, garnishes are key with fish -lemon wedge works nicely or sprinkle of fresh herbs – Dill, chives or parsley.

Ingredients

  • 2 haddock fillets
  • thawed Kosher salt and fresh ground pepper
  • 2 tbsp Dijon mustard
  • 1 tbsp fresh Dill (or substitute pinch of dried herbs)
  • ¼ cup panko breadcrumbs
  • 2-3 tbsp canola oil

Garnish: Fresh Dill and lemon wedges

Directions for Easiest Dijon Dill Haddock

  1. Use a paper towel to pat dry fish fillets. Place them on a plate.
  2. Sprinkle each side of the fillet with Kosher salt and fresh ground pepper.
  3. Spread about a half a tablespoon of Dijon mustard over each side of the fillet so it covers most of the fish. Sprinkle dill over the Dijon.
  4. Dredge the fillet in a shallow bowl of panko breadcrumbs. Pat so they stick to both sides of the fillet.
  5. Heat a non-stick pan on medium-high until it’s warm. Add oil and swirl pan so oil coats the bottom of the pan.
  6. Place fillet in the oil and should hear a little “sizzle.” Allow fish to cook for about two minutes. Try moving your pan around to see if the fish fillet moves easily. Flip the fillet and cook for another two minutes on the other side or until golden brown.
  7. Garnish your Easiest Dijon Dill Haddock with a lemon wedge and fresh herbs. Finally, I love serving this dish on a bed of quinoa, rice or bulgur.
