Summer season calls for this Grapefruit Salad with Pistachios! It’s the perfect blend of citrus, salty and savoury flavours. You can enjoy it as part of 15 Minute Meals at the Cottage or perhaps bring it for a potluck pleaser. Or maybe it’s part of your meal while dining al fresco! Nevertheless, you’ll also enjoy adding fresh herbs from your garden to this recipe for another dimension of flavour. This was a trick from my chef friend, Patrick Mathieu, author of Firehouse Chef.

What’s the Nutrition of Pistachios?

Pistachios are one of a few plant-based proteins that are classified as a “Complete Protein.” This means that they contain all nine essential amino acids. Other plant-based sources of “Complete Proteins” include: quinoa, soybeans, chia, hemp seeds and Buckwheat. One serving of pistachios is ½ cup and contains 11 grams of protein and an impressive 5 grams of fibre! Pistachios are a heart healthy addition to the diet, rich in unsaturated fats, magnesium, potassium and vitamin B6 for nervous system and metabolism.

What’s the Nutrition of Grapefruits?

Grapefruits are low in calories and high in nutrition. In fact, one grapefruit has 100 calories and 128% of your daily vitamin C. Additionally, this water soluble vitamin C, is an antioxidant that supports immune functioning, enhances iron absorption and helps form and repair blood, bones and other tissues. A grapefruit also provides about 60% of our daily vitamin A, which supports eye health, skin and our immune system. Finally, we receive 4 grams of fibre along with heart healthy potassium and magnesium.

Grapefruit Salad with Pistachios Recipe


  • Serves: 2
  • Prep Time: 10 minutes

Ingredients:

  • 4 cups of arugula
  • 1 pink grapefruit, sectioned (watch video how to section a grapefruit)
  • ¼ cup fresh Italian Parsley, chopped
  • ½ cup blackberries
  • 3 tbsp Large Parmesan flakes
  • ½ cup lightly salted or unsalted, pistachios
  • 2 Tbsp olive oil (to lightly coat)
  • Pinch of Kosher salt
  • Drizzle of balsamic glaze

Grapefruit Salad with Pistachios Directions:

  1. Firstly, in a plate (or bowl) arrange cleaned arugula.
  2. Next, add in grapefruit segments, blackberries and pistachios.
  3. Then, sprinkle fresh Italian Parsley and large pieces of parmesan cheese.
  4. Drizzle oil lightly over salad and toppings and then balsamic glaze. Sprinkle Kosher salt.
  5. Finally, toss salad to combine ingredients. You want the greens to be coated lightly. Taste to adjust seasoning to your preference.

This Grapefruit Salad with Pistachio is the perfect balance of sweet, savoury and salty! Your tastebuds will be dancing.

Ingredients

  • 4 cups of arugula

  • ¼ cup fresh Italian Parsley, chopped
  • ½ cup black berries
  • 3 tbsp Large Parmesan Flakes
  • ½ cup lightly salted or unsalted, pistachios
  • 2 Tbsp olive oil
  • Pinch of Kosher salt
  • Drizzle of balsamic glaze

Instructions

    1. In a plate or bowl salad bowl arrange your cleaned arugula.
    2. Next add in grapefruit segments, blackberries and pistachios.
    3. Sprinkle fresh Italian Parsley and large pieces of parmesan cheese.
    4. Drizzle oil lightly over salad and toppings and balsamic glaze. Sprinkle Kosher salt.
