Something about summer makes me crave fresh salads. Are you the same? After all, salads can be simple, flavourful and an impressive crowd-pleaser. This Raspberry Feta Spinach Salad is no exception. In fact, I made this salad when visiting my aunt and uncle’s cottage this past week (Read here for cottage meal inspiration). So let me tell you, this Raspberry Feta Spinach was a big hit!

Dietitian FACT: The vitamin C in the raspberries helps our body to absorb the non-heme iron in your spinach. Read more in our newest blog, Iron-Rich Foods: What you Need to Know.

Additionally, to decrease the pressure for grocery shopping during a pandemic, use what you have on hand for inspiration. This allows you to change up the fruit or the ‘crunch-factor’ with different nuts or seeds. Of course, I had to go for those Ontario raspberries that are in season now. Moreover, berries/fruits provide such beautiful sweetness in your salads.

Nevertheless, if you are new to building summer salads, be sure to check out my past blog – How to Build Sensational Summer Salads. This provides my salad formula. Therefore, to build this Raspberry Feta Spinach Salad, I wanted to use something sweet (raspberries), something salty (feta cheese) and provide extra crunch (sunflower seeds).

  • Serves: 4

  • 4 cups spinach, washed
  • 1 cup raspberries
  • 1/3 cup feta cheese, crumbled
  • 3 Tbsp sunflower seeds, unsalted
  • 2 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • Sprinkle of Kosher salt

Optional: Drizzle aged balsamic along top of salad & fresh herbs (basil, mint, Italian parsley)

Directions for Raspberry Feta Spinach Salad:

  2. Then, add raspberries, feta cheese and sunflower seeds on top.
  3. Drizzle greens and toppings with oil and balsamic vinegar. Sprinkle Kosher salt to draw flavours.
  4. Next, toss gently to combine.
