It’s the week of Christmas, so do you know what you’ll be making? How about Avocado Deviled Eggs? After all, they’re a delicious (and nutritious) crowd-pleasing, hand-held appetizer. When growing up, my grandma used to make Deviled Eggs for family gatherings. This year, we are not able to get together with groups due to the pandemic, but that does not mean we cannot have some of our favourite traditional foods.

Here are the ingredient for the Avocado Deviled Eggs

For these Avocado Deviled Eggs, I recommend prepping the hard-cooked eggs in advance. After all, this takes only about 10 minutes and you can see how to do it in my previous recipe post, Hard-Cooked Eggs to Perfection. You can store hard-cooked eggs in the fridge for up to seven days, so they are an ideal make-ahead or meal-prep option.

I chose to add avocado to bring that festive green hue. Also, avocado boosts our healthy monounsaturated fats, which are good for cholesterol lowering and reducing inflammation. We also receive vitamin A, folate, vitamin C and potassium. Finally, many do not know that avocados are a great source of fibre with 7 grams in half a fruit.

  • Prep Time: 5 minutes
  • Cook Time:10 minutes
  • Serves:4-6

Ingredients:

  • 6 eggs, Hard-Cooked to Perfection (seerecipe)
  • 2 tbsp of low-fat mayonnaise
  • 2 tsp lime or lemon juice
  • Whole small avocado, smashed
  • Fresh ground pepper and Kosher salt to taste

Garnish: Fresh chives/dill/green onions

Directions for Avocado Deviled Eggs:

  1. Firstly, hard-cook your eggs in advance and allow to cool. I always use my go-to blog recipe, Hard-Cooked Eggs to Perfection.
  2. Then, peel hard-cooked eggs and cut in half length-wise.
  3. Using a medium-sized bowl, scoop yolks out of the halved eggs. You should have 12 empty egg white halves.
  4. Then, mash the egg yolks with a spoon and stir in with ingredients in bowl. Add salt and pepper to taste.
  5. Add to mayonnaise, lime juice and avocado to the bowl of egg yolks and stir together.
  6. Using a teaspoon, scoop egg filling back into the halved egg whites.
  7. Finally, garnish with chives and even pomegranates!
