Ingredients:
- Oil
- 6 Eggs, fresh (choose amount based on how many sandwiches you’re building)
- Topping Options: Ham, Bacon, Cheese, Green Onions, Peppers
- 6 Bagel or English muffins, gluten free or sourdough (Low FODMAP)
- Butter or margarine
- Kosher salt & fresh ground pepper
Freezer Egg Sandwich Directions:
- Firstly, toast your bagel/English muffin and add butter or margarine. Set aside to allow to cool.
- In a non-stick pan, fry your egg in oil and season with salt and pepper. Fry egg until white is set; flip and add cheese to allow to melt. Set egg aside on a plate to cool.
- Cook ham, prosciutto or bacon, if using. Set aside to cool.
- Then, when all ingredients have cooled, place the cheese-topped egg on top of half English muffin/bagel. Layer additional ingredients and green onion garnish, if using. Cover with the other half of the muffin.
- Finally, wrap the sandwich tightly in foil or plastic wrap. Place in a freezer bag that’s labeled with a reminder to use within 2 to 3 months from preparation date.
