Herb and Garlic Salmon with Sunflower Seeds

I’m all about simplicity when it comes to cooking. I love using minimal ingredients to create dishes that taste great. This Herb and Garlic Salmon recipe is certainly a fun spin on my Seared Salmon with Walnut Parsley Gremolata. That is basically a fancy way of saying chop up garlic with fresh herbs and add nuts or seeds for crunch. I have also prepared this Herb and Garlic Salmon recipe using different types of white fish, such as sole, cod, and haddock. You can serve your salmon on a bed of whole grains like quinoa, brown rice, or bulgur.

Herb and Garlic Salmon with Sunflower Seeds


  • Serves: 2
  • Prep time: 5-10 minutes
  • Cook time: 6-8 minutes

Ingredients:

  • 2 salmon fillets (about 200 grams each), fresh or frozen/thawed
  • salt and pepper seasoning
  • 1-2 tbsp olive oil
  • ½ cup fresh Italian parsley, chopped
  • ¼ cup unsalted sunflower seeds, roasted & chopped
  • 1 clove garlic, minced
  • squeeze of lemon juice
  • sprinkle of salt
  • Cooked quinoa
  • 1 cup of cherry tomatoes

Garnish: Fresh Italian parsley and lemon wedges

Directions for Herb and Garlic Salmon:

  1. Firstly, season salmon fillets with salt and pepper.
  2. Secondly, in a medium bowl, combine parsley, sunflower seeds, oil, garlic, lemon and salt. Set aside.
  3. In a fry pan on medium heat, heat olive oil. Add salmon fillets to oil when hot and you can hear a sizzle when placing fillet on the heat. Cook salmon fillet for about 3 minutes on each side, ideally turning only once.
  4. Remove salmon fillets and place on a bed of quinoa or other whole grain.
  5. Add your parsley sunflower seed mixture to the frying pan to heat up the mixture slightly. Top salmon fillets with this mixture.
  6. Add cherry tomatoes to your frying pan with some oil and cook for about 3-5 minutes until softened. In addition, a pinch of salt to cherry tomatoes helps pull out the flavour.
  7. Place cherry tomatoes on top of quinoa and beside your herb and garlic salmon fillet.
  8. Finally, garnish with extra parsley and lemon wedge as desired.
