Pepper Ring Eggs
Pepper Ring Eggs are the perfect addition for a quick, easy, but impressive breakfast option. After all, breakfast or brunch is the favourite meal of the day for so many of us! Generally, we want high protein and sometimes a little more elaborate meals when entertaining by the lake. I love that you can serve these elegant Pepper Ring Eggs on sprouted grain toast or your favourite toast with side of fresh fruit. Additionally, you can add them to a breakfast sandwich.
How to Make Pepper Rings Eggs?
The key to making these Pepper Ring Eggs is to ensure that you have a thick-enough pepper ring so that it captures all that egg nutrition goodness! I have to admit, the first time making these, I cut the pepper ring a little too thin (about the width of my pinky) and the egg spilled over on the fry pan. The good news is that they’re still so tasty! Additionally, making the rings the same depth around helps with uniform cooking of the pepper.
Ensure your pepper is cut about 1/2″ thick for these Pepper Ring Eggs!
Nevertheless, after you have your sliced pepper rings, you are simply tossing them on a non-stick fry pan and cooking one side first. Next, flip the pepper ring and crack your egg. Eggs are a nutritious wonder and all for only 70 calories and 6 grams of protein. As a dietitian, I recommend clients avoid skipping the yolk since this is where you get half the protein and most of the nutrition! As well, the myth of cholesterol in foods has been debunked, which has thankfully liberated this once villainized food and instead highlighted them as a heart healthy option. Pepper Ring Eggs Recipe
- Prep Time: 3 minutes
- Cook Time: 5 – 8 minutes
- Serves: 2
Ingredients:
- Bell pepper, sliced into ~ ½” thick rings
- 4 eggs
- Kosher salt
- Fresh ground pepper
Garnish: Favourite cheese, fresh Italian Parsley, Chives or scallions
Directions for Pepper Ring Eggs:
- Firstly, heat a non-stick fry pan or skillet over medium heat, and grease lightly with oil or cooking spray.
- Then, place bell pepper rings in the fry pan and sauté for two minutes. Be sure to leave space around the peppers so they can be flipped and are not overcrowded.
- Flip the ring, then crack an egg in the middle. Next, season with Kosher salt and fresh ground pepper.
- Now, cook the egg to your liking. Cook for about 2 to 4 minutes for a sunny-side egg. Flip your egg for over-easy style and cook for additional couple minutes (~4 minutes) depending on your preferred doneness.
- Cover with a lid for added heat and to melt cheese on top, if using.
- Finally, garnish with fresh herbs like Italian parsley, chives or green onions.
