Especially when it comes to the versatility of adding Pure Pumpkin (canned) to your meals. Therefore, it’s now a new pantry staple because the pumpkin adds moist texture, subtle flavour and a creamy mouthfeel. In one cup of pumpkin, we receive only about 100 calories and an impressive 6-7 grams of fibre, which helps with cholesterol lowering and feeling full. There’s also over 200% of your daily vitamin A requirement in the same portion. The colourful pumpkin flesh not only has this powerful antioxidant (beta-carotene) but it also provides vitamin K, copper, iron and vitamin E. Furthermore, pumpkin can help in boosting immunity with its antioxidant content from beta-carotene, vitamin C as well as vitamin E. Without a doubt, pure pumpkin is a nutrient-dense addition to your recipes. You can also portion 1 cup amounts in your freezer for easy additions to your smoothies, soups or sauces.

Pumpkin Cinnamon French Toast Recipe


  • Prep time: 10 minutes
  • Cook time: 10 minutes
  • Serves: 4-5

Ingredients:

  • 5 eggs, whisked
  • 1 tsp cinnamon
  • 1 tbsp brown sugar
  • ½ cup milk or lactose-free alternative
  • ¾ cup Pure Pumpkin, canned
  • Fresh cracked pepper & pinch of Kosher salt
  • 2 tbsp butter/margarine
  • 6 – 8 slices of bread – whole grain/sprouted grain/gluten free

Toppings

Directions for Pumpkin Cinnamon French Toast:

  1. Firstly, in a medium bowl, whisk together eggs, cinnamon, brown sugar, milk and pure pumpkin. Add pepper and Kosher salt to season. Pour mixture into a flat plate to dredge the bread.
  2. Melt butter/margarine on a fry pan to medium-high heat.
  3. Dip bread into egg mixture and turn pieces to coat both sides evenly.
  4. Place egg-mixture-coated bread onto fry pan and cook until golden brown or about two to three minutes a side.
  5. Finally, serve your golden brown Pumpkin Cinnamon French Toast with maple syrup, sprinkled oats and fresh fruits. Additionally, a side of Greek yogurt, eggs or ham slices can be added to boost protein.

Ingredients

  • 5 eggs, whisked

  • ½ cup milk
  • ¾ cup Pure Pumpkin (LINK)
  • Fresh cracked pepper & pinch of salt
  • 2 tbsp butter/margarine

  • Raw oats
  • Canadian Maple syrup drizzle
