A goat cheese salad is the ultimate way to enjoy a truly satisfying, savoury and creamy veggie-boosting dish. This summer, my busy family of four has been enjoying more time outdoors and entertaining friends and family. We have a 5.5 month old baby (plus a 2.5 year old toddler) so quick-to-assemble salads are a MUST. This Goat Cheese Salad with Grapes has been a staple recipe on repeat. I’m sure you’ll enjoy it too!
As a dietitian and momma, I’m sharing a favourite summer Goat Cheese Salad today!
How to Make a Goat Cheese Salad:
As a dietitian and foodie, I pride myself on making healthy eating both delicious and nourishing. However, knowing the 4 main elements in creating an awesome salad is crucial. This will encourage veggie consumption for everyone, children included!
Here are my top 4 tips to make an awesome salad:
- Choose Your Green(s) for the Base: I used mixed salad greens for my Goat Cheese Salad but you can switch this up to include arugula, kale, spinach or a combination of greens.
- Include Something Sweet & Savoury: Fresh grapes add a beautiful texture and sweetness to this salad. The addition of some raisins or craisins also gives a nice pop of sweet to compliment the hint of salty with the goat cheese and pinch of kosher salt.
- Add a Crunch Factor: Varying textures create a fun mouthfeel when eating. I used fresh and colourful, crisp, bell peppers, unsalted cashews and unsalted seeds (pumpkin and sunflower) to give lots of fun chomp.
- Easy Dressing: Two words – oil and vinegar. I used a 2:1 ratio of extra virgin olive oil to balsamic vinegar. In my opinion, a small sprinkle of kosher salt on ALL salad ingredients is necessary for the flavours to pop.
Foodie Dietitian TIP: Use unsalted nuts or seeds in a salad instead of salted. You can then adjust salt with a sprinkle of Kosher salt.
