Flatbreads are one of my all-time favourite easy peasy meals. These Veggie & Egg Flatbreads are a one-pan meal that can be ready in no time. Additionally, they can be enjoyed for breakfast, lunch or even dinner, which allows for handy flexibility in meal planning. Likewise, be sure to be adaptable by using up your current veggies, herbs or protein on hand. Considering I ALWAYS have eggs in the fridge, that was my go-to protein choice for these Veggie & Egg Flatbreads.

All about the Yolk!

When cooking with eggs there’s something special about the velvety yellow yolk that just entices the eye. Don’t you agree? Similarly, adding a fried egg on top of a dish makes it extra elegant – such as Breakfast Lentils with Garlic and Eggs, Shakshouka or a Rice dish with egg on top. In fact, when I have leftover quinoa or stir-fry, I often add a sunny side up egg on top to boost the protein and create a new meal using leftovers.

The yolk doesn’t just add a yellow punch of colour, but it also adds a nice boost of nutrition too! After all,  eggs are an awesome source of complete protein with 6 grams per egg and only 70 calories. They’re also rich in 14 essential minerals such as choline for the brain and lutein for eyes. Additionally, Ontario eggs go from the farm to the grocery store in only 4 to 7 days – delicious and always fresh!

  • Serves: 2
  • Cook time: 10-15 minutes
  • Prep time: 10 minutes

Ingredients

  • 2 pieces of whole grain naan bread
  • 4 Tbsp pizza sauce
  • Sprinkle oregano, dried
  • 2 mushrooms, sliced
  • ¼ pepper, sliced
  • ½ tomato, sliced
  • 2 tbsp sundried tomatoes/olives
  • ½ cup cheese – mozzarella, cheddar cheese, or feta, ricotta
  • 2 eggs

Optional: Garnish with Italian parsley or basil

Directions for Veggie & Egg Flatbreads:

  1. Firstly, pre-heat oven to 350F.
  2. Secondly, cut and clean veggies of choice. Grate cheese.
  3. Spread pizza sauce on top of naan bread. Sprinkle dried oregano.
  4. Top pizza with cheese, veggies and crack an egg in the middle.
  5. Finally, bake for about 10-15 minutes; or until cheese is melted, egg whites are solid and crust is golden.

These are delicious and versatile flatbreads. Perfect for any meal of the day!

  • ¼ pepper, sliced
  • ½ tomato, sliced
  • 2 tbsp sundried tomatoes/olives
  • ½ cup cheese - mozzarella, cheddar cheese, or feta, ricotta
  • 2 eggs

Instructions

    1. Firstly, pre-heat oven to 375F.
    2. Secondly, cut and clean veggies of choice. Grate cheese.
    3. Spread pizza sauce on top of naan bread. Sprinkle dried oregano.
    4. Top pizza with cheese, veggies and crack an egg in the middle.
    5. Finally, bake for about 8-10 minutes; or until cheese is melted, egg whites are solid and crust is golden.
